LED光源在促进秀珍菇菌丝降解代谢麦麸中的作用

摘    要:为确定LED光照对秀珍菇菌丝降解代谢硒强化麦麸中的促进作用,开发LED在食用菌营养转化代谢方面的潜在优势,以富硒秀珍菇液体种为供试菌株,通过LED间歇照射和遮光2种不同培养方式,研究秀珍菇菌丝对降解代谢硒强化麦麸的影响。结果表明通过LED间歇照射培养,秀珍菇富硒培养组(Se-L)和秀珍菇培养组(CK-L),其麦角固醇含量分别比对应的遮光组(Se、CK)提高14.2%和8.8%;秀珍菇富硒培养组(Se-L)的硒转化效率比遮光组(Se)提高34.3%,可溶性蛋白含量提高率达42.6%;LED光照间歇照射培养降低了培养产物中的可溶性总糖含量,而使柚皮苷和川皮陈素等酚类物质的含量提高。研究表明LED间歇照射培养可促进秀珍菇菌丝生长,并能提高对硒强化麦麸的降解代谢与硒营养转化作用,是影响培养产物营养品质指标的直接因素。

Effect of LED on Wheat Bran Digestion by Pleurotus geesteranus Mycelia
Abstract:Effect of LED light (L)on the digestion of Se-enriched wheat bran (SeWB)by the mycelia of P leurotus geesteranus through the fungal metabolism was investigated to evaluate its potential for nutrient transformation applications.The results showed that,under intermittent LED exposure,the ergosterol content in the powder of the mushrooms cultured on the SeWB medium (Se-L treatment)and on the non-enriched wheat bran medium (CK-L treatment)increased 14.2% and 8.8%,respectively,over the shaded groups (Se and CK treatments);and,the Se transformation efficiency of Se-L treatment increased by 34.3%,while the soluble protein in Se-L mushroom powder raised 42.6% over those of the shaded counterparts.The total sugar content in the mushroom powder from Se-L or CK-L decreased,but the contents of naringin and nobiletin increased as compared to Se or CK samples. Consequently,the intermittent LED appeared to stimulate the fungal mycelia growth and metabolism leading to a heigThened Se and nutrient transformations from the SeWB medium resulting in an improved nutritional quality of the product made of the cultured mushrooms and SeWB.
