摘    要:在食品安全市场准入制度之下,食品企业的产品都要进行出厂检验,在各类食品中,一般都要求检测茵落总数和大肠菌群两个微生物指标。笔者根据自己的工作经验,结合质量管理中4M1E法(人、机、料、法、环),谈谈如何提高食品企业微生物项目出厂检验的准确性。

Abstract:Under the policy of food security and market admittance,all the food enterprises have to do a routine test for their products.In a general way,the microbiological index of both total bacteria and coliform must be checked in all kinds of food.According to his work experiences and 4M1E policy(Man,Machine,Material,Method,Environment),the author discusses how to improve the accuracy of microorganism determination for the food enterprises.
