摘    要:低场核磁共振(LF-NMR)技术作为水果采后检测技术,因具有无损、便捷、准确、实时获得数据、样品用量少等优点,已在水果贮藏保鲜领域得到一定的研究和应用。本文介绍了低场核磁共振技术的基本原理,并从水分分析、组织结构分析、缺陷鉴别、内部失调研究、营养成分分析等方面综述了国内外低场核磁共振技术在水果采后品质检测中的研究进展,总结了该技术存在的问题,并对其应用前景进行了展望。

Research Advances of Low Field Nuclear Magnetic Resonance in Postharvest Fruit Quality Determination
Abstract:Low field nuclear magnetic resonance(LF-NMR) technology, as an effective testing technology for postharvest fruit, has been exploited and applied in the field of fruit storage preservation, due to the advantages of non-destructive, convenient, accurate, real-time data collection and small sample amounts. The principle of LF-NMR is introduced in this paper, and the research advances in postharvest quality testing of fruits by means of LF-NMR at home and abroad are summarized, from several aspects of moisture and structure analysis, defect identification, internal disorder study and nutritional components determination. The existing problem of the technology is summarized, and the application prospects are discussed.
