摘    要:介绍了鹌鹑蛋的保健作用,探索了以鹌鹑蛋为主料,研制具有保健作用的酱香型鹌鹑蛋软罐头食品的工艺条件和产品配方。

Abstract:Taking the quail egg as the mother stock,this experiment introduced the quail egg's health care function,explored the technological conditions and the product formula of processing sauce-odor-type soft canned food with health effect.
