| 摘 要： | 以福建紫皮果蔗为原料,进行了常温、常温与单捆自发气调包装,冷藏、冷藏与单捆自发气调包装的研究。结果表明,以常温与单捆气调包装的效果为佳,贮藏期突破30d;贮藏后试样的VC含量、出汁率及pH值降低,而可溶性固形物含量及呼吸强度增加,气调包装可减缓试样指标降低与增加的程度。
