果蔗常温自发气调保鲜技术研究

摘    要:以福建紫皮果蔗为原料,进行了常温、常温与单捆自发气调包装,冷藏、冷藏与单捆自发气调包装的研究。结果表明,以常温与单捆气调包装的效果为佳,贮藏期突破30d;贮藏后试样的VC含量、出汁率及pH值降低,而可溶性固形物含量及呼吸强度增加,气调包装可减缓试样指标降低与增加的程度。

Abstract:In this paper,Fujian Purple cane as raw material,carried out at room temperature,room temperature with a single bundle of self-modified atmosphere packaging,refrigeration,cold storage and modified atmosphere packaging of spontaneous single bundle.The results showed that at room temperature and the effect of a single bundle of modified atmosphere packaging better,breaking 30 d storage period;Vc content,juice yield and lower pH values decrease,while the soluble solids and respiration increase,decrease and inc...
