内蒙古包头3种常食用葡萄抗氧化活性的研究

摘    要:[目的]为了研究包头常食用葡萄抗氧化能力。[方法]利用分光光度法对3种内蒙古包头市常食用葡萄还原性以及清除羟自由基、超氧阴离子自由基的活性进行了测定。[结果]3种葡萄具有不同程度的还原性以及清除羟自由基、超氧阴离子自由基的活性。其中,龙眼清除.O2能力最强,马奶还原力最强,3种葡萄清除.OH能力都很强。[结论]马奶和龙眼抗氧化能力强于红提。

Abstract:[Objective] The research aimed to study radical scavenging activity of grape in Baotou.[Method] The radical scavenging activity including ·OH and O2· and reducing power of three kinds of rape in Baotou were studied by spectrophotometry.[Result] All the kinds of grape had various radical scavenging activities and reducing powers.Longyan had the highest activities of scavenging O2· radicals.Manai had the highest reducing power.All kinds of grape had higher activities of scavenging ·OH.[Conclusion] Longyan and Manai had higher radical scavenging activity than Hongti.
