Comparative analyses of nutritional composition in muscle of male and female Hemicculter Leuciclus

Nutrient components in the muscle of male and female Hemicculter Leuciclus were investigated. Sample fish were collected from Yuqiao Reservoir. The results showed that the content of crude protein in fresh muscle of female and shale Heznicculter Leuciclus werel8. 20% and 18. 80% respectively. The total content of amino acids of female and male Hemicculter Leuciclus was 18.91 rag/g, 20.14 mg/g, Essential amino acid （EAA）/ Total amino acid （TAA） and four kinds of flavor amino acid（FAA）/Total amino acid （TAA）of male and female Hemicculter Leuciclus were no differences. The essential aminoacids index（EAAl）of female Hernicculter Leuciclus was 60.24,a little lower than that of male HemicculterLeuciclus （62.23）. According to the amino acids score（AAS） , the first lim- ited amino acid of Hemicculter Leuciclus are Methionine（Met） ＋ Cystine（Cys） and the second limited amino acid is Threonine（Thr）. But according to the basis of chemical score（CS）, the first limited ami- no acid of Heznicculter Leuciclus are Methionine ＋ Cystine （Met＋Cys） and the second limited amino acid is Phenylalanine ＋ Tyrosine （Phe＋Tyr）. It was indicated that Hemicculter Leuciclusis is a high quality food fish for human,and it could be a potential aquaculture species.
