摘    要:在模拟胃液条件下,研究了4种不同处理对破碎大蒜清除亚硝酸盐能力的影响,并通过正交实验得出破碎大蒜的最佳处理条件。单因素实验表明,破碎大蒜在40℃,放置20min,酸性环境和避氧条件下,对亚硝酸盐的清除效果较好;正交实验表明,最佳处理条件是45℃下放置15min,pH值为5,避氧。

Abstract:In the conditions of imitation of stomach juice,the effect of crushing garlic with four treatments to purge nitrite were studied. The single factors experiment results showed that the fragmentation garlic under the condition of 40 ℃,20 min and acid environment,the clearance effect of removing oxygen were better. The orthogonal experiment results showed that the best conditions of treatment were 45 ℃,15 min,pH 5 and keeping away oxygen.
