摘    要:介绍了西瓜皮的营养成分和医用价值,并对西瓜翠衣汁、西瓜皮果胶、酱瓜皮、西瓜皮果酱、西瓜皮果脯、西瓜皮糖条、西瓜皮果醋等加工工艺和操作要点进行阐述,以期合理地研发利用西瓜皮资源。

Abstract:Nutritional constituent and medicinal value of watermelon skin are introduced at first,then process theories and methods,craft operation key points on watermelon skin juice,watermelon skin fruit pectin,pickled watermelon skin,watermelon skin fruit jam,watermelon skin candied fruit and watermelon skin fruit vinegar are introduced. The paper is valuable to exploitation of watermelon skin resources.
