微生物与食品的主要关系

摘    要:微生物与食品的关系主要有有益、有害、有益和有害相互转化几种情况。有益分为直接有益和间接有益,又可进一步分为有益于人体健康和有益于生产;对于食品有害的微生物,有些是微生物自身是病原菌、致病菌,可以引起食品污染,有些是因为这些微生物并无危害,但是其代谢产物有毒性,危害人体健康;还有一些微生物自身不会致病也不会产生有害代谢物,但是其生长繁殖会给生产带来一些影响。一些微生物对生产和健康的影响较小,而另一些微生物在一些情况下有利于生产和健康,但在另一些情况下则不利于生产,有害于健康。

Key Relationships Between Microbe and Food

Abstract:Relationships between microbe and food are mainly beneficial,harmful and transformation between the beneficial and the harmful.Availability is divided into direct useful and indirect useful,and furtherly divided into being benifical to human health and production.For microbe which is harmful to food,some microbial own are disease original bacteria and pathogens that can cause food pollution.Some are not harmtul,but their metabolism products have toxicity which are harmtul to human health.In addition,some microbes can′t cause diseases by themselves and produce harmful metabolites,but their growth propagation will bring production some troubles.Some microbes have a little influence on production and health,while others are benifical to production and health in some circumstances,but in other cases,they are detrimental to production and harmful to heath.
