| 摘 要： | 探讨了以锌盐和铜盐为主的不同锌铜比加工皮蛋的方法。分析了锌盐和铜盐在加工皮蛋时的用量及对产品质量的影响。结果表明,锌盐(ZnSO4·7H2O)用量为0.3%时,铜盐(CuSO4·5H2O)的用量达到锌盐用量的0.05%,所加工的产品具有良好的商品品质。

| Abstract: | This paper discussed the technique of processing preserved egg based on different zinc copper ratio, analyzed the dosage and influence of zinc salt and copper salt in the preserved egg. The result enunciation,when the zinc salt dosage is 0.3 %,the dosage of the copper salt attains the zinc salt dosage of 16,the products have good merchandise quality. |
