摘    要:简介了减压保鲜贮藏理论,并对减压保鲜贮藏系统构成——密闭的耐压空间、真空低压系统、制冷低温系统、调节湿度系统、测量控制系统等5 个部分做了逐一分析;评述了减压贮藏的特点,归纳了国外减压贮藏保鲜研究进展,总结了国内减压贮藏保鲜的发展历程;分析了近年来其在果蔬保鲜上应用效果,并对减压保鲜贮藏研究中的限制性问题“耐压、失水、风味变淡”进行了探讨;指出了今后果蔬减压贮藏保鲜研究了发展方向,为减压贮藏研究提供基本资料。

Research Progress on Fruit and Vegetable Decompression Storage
Abstract:In order to provide basic information for hypobaric storage, a brief overview of the hypobaric storage theory was made in this paper. In this article, firstly, decompression preservation with storage-confined space pressure, vacuum low- pressure system, cryogenic refrigeration system, the humidity adjusting system and measurement and control systems were analyzed; secondly, the characteristics, the research progress abroad and the development course of the hypobaric storage and its application effect on fruit and vegetable preservation were introduced objectively; thirdly, the restrictive problems in the study of hypobaric storage, such as pressure, dehydration and flavor fades, were discussed; finally, the development direction in the future of the decompression preservation of storage was pointed out.
