摘    要:本实验以用新鲜莲藕获得自制藕粉为参照,对从市面上所购买的十种不同品牌纯藕粉样品进行含量测定、观感识别、色素检查、糊化温度的测定以及紫外分光测定综合检验。实验发现,大部分的藕粉均未达到国家标准。正确判断所购藕粉的真假,要结合观感识别、糊化温度等进行综合比较,判断出所购藕粉的真假。

Study of Methods to identify the authenticity of lotus root powder
Abstract:In recent years, there are different brands of pure lotus root powder on the market, but many brands of pure lotus root powder are adulterated with other cheap starch granules to make the best of a bad situation. It is difficult to know whether the brands of lotus root powder sold on the market are adulterated with other cheap starch granules to identify accurately with the naked eye. Therefore, in order to accurately, objectively and scientifically determine whether the commercially available brands of root powder are pure root powder, this experiment was conducted to determine the content, visual identification, pigmentation, paste temperature and UV method on ten different brands of pure root powder samples purchased from the market with fresh lotus root as reference. The result shows,most of the Lotus root powder are up to the national standard.To correctly determine the authenticity of the purchased lotus root powder, a combination of visual identification and gelling temperature should be considered in order to draw the correct conclusion and determine the authenticity of the purchased lotus root powder.
