不同饲养方式对文昌鸡肉质特性的影响

摘    要:为研究饲养方式对文昌鸡肉质的影响,测定了散养和笼养118日龄母鸡胸、腿肉样的理化特性、常量化学成分和脂肪酸的相对含量。与散养鸡相比,笼养鸡腿肌的熟肉率高、滴水损失和剪切力低、灰分含量低、花生四烯酸(C20:4)含量高。饲养方式对胸肉的所有肉质测定指标均无显著影响(P>0.05)。

Abstract:The objective of this article was to investigate the effect of rearing conditions(in cages or free range) on meat quality of Wenchang chickens.The physico-chemical characteristics,general chemical content and fatty acid composition were determinated of leg and breast muscles from 118-day-old pullets.Compared with pullets in free rang,leg muscles from chickens in cages had lower drip loss and shear force value,higher yields of cooked meat,lower ash contents and higher contents of arachidonic acid(C20:4).The rearing conditions did not exhibit a significant influence on the meat quality of breast muscles(P>0.05).
