摘    要:食品物料的介电常数是食品加工中的重要参数,它广泛应用于食品贮藏、加工、灭菌、清选分级和品质检测等领域。为此,针对国内外食品物料介电常数的研究现状进行了深入的分析,阐述了谐振微扰法、自由空间法、电路电桥法等介电常数测量方法的特点,并予以比较;同时,分析了影响食品物料介电常数测量的相关因素以及存在的问题,提出了解决的办法,为食品加工过程中分析研究物料的特性品质提供有效的测量手段。

Abstract:The dielectric constant of food material is the important parameters in the food processing,it is widely used in food storage,processing,sterilization,grading quality inspecting and so on.This paper makes a deep analysis of the dielectric constant domestic and foreign research status quo of food material.It reveals the characteristics of measuring methods for cavity perturbation method,free-space method,bridge circuit method and so on,and then make comparison.Related influencing factors and existing problems of the dielectric constant of food material are discussed and some methods are proposed.The technology is a potential tool for studying the characteristic and character of food material in processed foods.
