食(药)用真菌富硒及产品开发研究进展

摘    要:硒是人体必需的微量元素之一。食(药)用真菌具有较强的耐硒和富硒能力,能够将无机硒转化为有机硒。对近几年食(药)用真菌的富硒研究和产品开发现状进行了综述,并对食(药)用真菌富硒应用前景做了展望。

Abstract:Selenium is an essential trace element for humans.Edible and medicinal fungi had the ability of selenium tolerance and selenium enrichment,which could convert inorganic selenium into organic selenium.In this paper,the research of selenium enrichment and product development of edible and medicinal fungi were reviewed,and application prospect was also prospected.
