辣椒果色及相关色素国内外研究进展

摘    要:综述了近年来国内外在辣椒果色遗传,果实中类胡萝卜素组分及其生物合成与辣椒果实外观颜色的关系,以及环境因素对类胡萝卜素合成的影响三方面取得的研究成果和进展。介绍了辣椒红素的理化性质以及市场应用,对目前辣椒加工业中辣椒红色素的提取、鉴定方法作了简单的阐述,指出了目前辣椒色素加工业中存在的问题,并对未来辣椒色素加工品种的育种工作以及相关理论的研究方向进行了展望。
