摘    要:以磨盘柿为试材,通过对减压贮藏的果实在冷藏期间主要生理生化指标和贮藏品质变化规律的分析,研究了减压贮藏对柿果保鲜效果的影响。结果表明,与普通冷藏相比,减压冷藏对磨盘柿硬度的保持效果明显,并能保持较高的可滴定酸含量,对可溶性固形物(去除单宁后)、膜相对透性和贮藏后期丙二醛含量的增加也有抑制作用;减压冷藏还能有效抑制柿果PPO活性的上升和SOD活性的下降,从而减少柿果在贮藏后期的褐变,提高贮藏品质;但对可溶性单宁含量没有显著影响。

Abstract:The effects of hypobaric storage on the fruit of mopan persimmons refrigerated were studied by analysis of physiological and storage properties of the fruit. The results showed that hypobaric storage had remarkable effect on the firmness keeping of mopan persimmons, compared with common cold storage. And the hypobaric storage had a high titratable acidity content, and inhibited the increasing of total soluble solids content(removing soluble tannin), membrane relative permeability and MDA during the later period of storage. Hypobaric storage also inhibited the increase of PPO activity and the decline of SOD activity, and reduced the browning of mopan persimmon during the latter storage period and improved storage quality. But hypobaric storage had no effect on soluble tannin content.
