普洱茶中黄酮类化合物提取方法和抗氧化性初步研究

目的]研究普洱茶中黄酮类化合物的提取方法及其抗氧化性。方法]采用正交试验，分别用索式提取法、微波法和超声法提取普洱茶中的黄酮类化合物，比较3种方法的提取效率及黄酮类化合物含量，从而得到最佳的工艺方案，并对普洱茶中黄酮类化合物抗氧化性进行研究。结果]在3种提取方法中，超声波法提取的黄酮类化合物含量最大，为85．91mg／g，其最佳工艺方案为乙醇浓度90％，固液比1：10，超声时间15min，超声频率800W。3种方法的提取物对猪油的抗氧化能力为超声波法〉微波法〉索式提取法。结论]超声波法是较好的提取方法；普洱茶中黄酮类化合物对猪油具有较强的抗氧化作用，并与黄酮溶液浓度具有剂量效应关系。
