摘    要:利用辐照保障预制食品安全与质量技术研究是国际原子能机构设立与资助的研究项目。本文对该项目开展以来,各参与国家在辐照影响预制食品微生物安全性、营养与感官质量等方面的研究进展进行了综述,探讨了辐照保障预制食品安全与质量研究与应用方面存在的问题,提出了我国开展相关方面的研究与应用的建议。

Abstract:The project titled “utilization of irradiation to ensure the safety and quality of the prepared meal" was an contract research project supported by International Atomic Energy Agency. This paper reviewed the advancement of irradiation effects on the microbial safety, nutrition and sensory quality of different kinds of prepared food staff in the participating countries. The problems found in the past research were discussed. In order to accelerate the utilization of irradiation in the production and consumption of prepared food staff in China, some ideas and suggestions were also submitted.
