摘    要:以圆锥八仙花(Hydraangea paniculata Sieb.)新鲜粉红花瓣为原材料,通过正交试验确定了圆锥八仙花红色素最佳浸提条件,即:使用pH值为2的60%乙醇溶液,以料液比为1 g:20 mL,在80℃下提取6 h.该红色素在酸性条件下稳定性好,具有较好的耐热性及一定的耐光性,不耐氧化还原剂,Cu2+、Fe...

Abstract:An experiment was conducted to extract red pigment from Hydrangea paniculata by orthogonal design.The optimal extraction conditions were obtained as solid-liquid ratio 1∶20,extraction temperature 80 degrees C,extraction time 6 hours,and extraction solvent 60% alcohol(pH=2).The physical and chemical properties of the red pigment were studied.The red pigment extracted from H.paniculata was very resistant to heat and light and stable under acidic conditions,but it was sensitive to reductants and oxidants.Destructive effects of Cu2+,Fe3+ and Fe2+,unobvious effects of Na+,K+,Ca2+,Zn2+,Mg2+ and Mn2+,and protective effects of carbohydrate and organic acid on the extracted red pigment were observed.
