柚子皮茶的香气组成研究

摘    要:柚子皮经与绿茶和红茶加工制成柚子皮茶,其香气独特、浓郁。采用同时蒸馏萃取方法提取柚子皮和4种柚子皮茶的精油,进行气相色谱和气质联机分析,共鉴定出39种香气成分,其主要成分是柠檬烯、月桂烯、芳樟醇及其氧化物等。柚子皮中含有茶叶原有香气的多种成分,窨制后使产品的花香更明显。文中对柚子皮和4种柚子皮茶的香气成分及其含量和窨制效果也进行了对比分析。

Abstract:Green and black teas were scented with pomelo peel. The volatile oils were prepared from pomelo peel and 4 kinds of scented teas by using simultaneous distillation and extraction,where 39 compounds were identified by capillary gas chromatography-mass spectrometry.The main constituents were limonene,myrcene,linalool and its oxides,etc. The results accounted for the complexity and harmony of the scented teas. The aromatic compound and its content of pomelo peel and 4 kinds of pomelo peel tea,and the scenting effect of pomelo peel tea was compared and evaluated.
