朝鲜蓟加工品中多酚含量研究

摘    要:为研究分析不同产地朝鲜蓟罐头食品中多酚种类、含量的差异,应用液相色谱-电喷雾串联四极杆质谱方法(LC-MS/MS)进行检测,样品在避光条件下经70%的甲醇水溶液室温震荡提取1 h后,进行液相色谱-质谱分析。采用Agilent proshell 120 EC-C18色谱柱,流动相A为0.1%乙酸-水,流动相B为乙腈,采用线性梯度洗脱。结果表明,此方法共定性定量出朝鲜蓟罐头中17种多酚物质,同一样品中不同多酚含量差异显著,绿原酸含量最高为625.701 μg/g,洋蓟素的含量次之,平均值为315.823 μg/g;按照不同地区多酚含量比较,亚洲样品中,多酚含量普遍偏低。由此得出,应用LC-MS/MS可以快速高效检测出朝鲜蓟罐头食品中多酚含量,多酚含量因产地不同差异显著。

Abstract:

To study difference of polyphenols in different habitats artichokes canned food, polyphenols are detected by LC-MS/MS. The samples are extracted with 70% methanol aqueous solution in dark conditions. LC-MS/MS analysis was conducted on Agilent proshell 120 EC-C18 column (4.6 mm×50 mm, 2.7 μm), 0.1% acetic acid and water were comprised as mobile phase A and acetonitrile was mobile phase B, using a linear gradient elution. The results showed that, 17 kinds of polyphenols were identified. The polyphenol content showed significant differences in the same sample, the content of chlorogenic acid was the highest, it was up to 625.701 μg/g and artichokes is following that was 315.823 μg/g. The Asian sample, the content of polyphenol was generally low. LC-MS/MS can be quickly and efficiently detected polyphenol in artichokes canned food.
