菌株I13产碱性蛋白酶的酶学性质研究

摘    要:目的]研究菌株I13产碱性蛋白酶的酶学性质。方法]从一株碱性蛋白酶生产菌株I13中得到了碱性蛋白酶粗酶液,并研究了温度和pH对该酶液酶活力的影响。结果]所产碱性蛋白酶的最适反应温度为40℃,在20~30℃范围内仍保持了最大活力的40%以上;最适反应pH为10.5,在pH 8.0~11.0范围内保持了最大活性的90%以上,有较宽的pH谱。结论]该碱性蛋白酶具有开发成为洗衣粉添加剂的巨大潜力。

Abstract:Objective] This study was aimed to investigating properties of alkaline protease produced by strain I13.Method] Crude enzyme of alkaline protease was obtained from alkaline protease produced by strain I13,while effects of temperature and pH value on enzyme activity was also investigated in this study.Result] The optimal temperature of alkaline protease produced by strain I13 was 40 ℃,and over 40% of the largest enzyme activity still maintained within the range from 20 to 30 ℃.The optimal pH value was 10.5,and over 90% of the largest enzyme activity still maintained within the range from 8.0 to 11.0,which had broader pH value spectrum.Conclusion] This alkaline protease has huge potential to be developed into washing-powder additive.
