贺兰山地和腾格里沙漠牧区山羊乳中乳酸杆菌的分离及其生物学特性研究

摘    要:本研究从贺兰山地和腾格里沙漠区牧民家庭中采集到31份山羊乳及乳制品样品,进行了乳酸杆菌的分离及其生物学特性的研究,从样品中分离到17株乳杆菌的2株双歧杆菌,乳杆菌的分离率为54.8%,经发酵试验发现有些菌株能产酸凝乳,产芳香味等性能良好,均属中温菌,适于做乳制品的发酵剂。

Abstract:samples of milk and milk products were collected from the herdsman`s home in HeLan Mountain and north east area of Tenggeli desert lactobacillus was isolated and their biological properties were studied 17 strains of lactobacillus were isolated.The rate of isolation were 54.8%.Through fermentation test,some strains had properties of producing acid,solidifying milk and producing good smell.They were mediumtemperature strain and could be used as leaven in milk products.
