| 摘 要： | 本文介绍了乳及乳制品中皮革水解蛋白的几种检测方法,主要包括比色法、氨基酸自动分析仪测定法、高效液相色谱法、高效液相色谱-质谱联用法、毛细管电泳法,并对各种方法的原理及其研究情况进行了详细阐述。
