摘    要:从原料薯的收购、贮藏、加工场地的选择和时间、加工技术、产品的感官与理化指标、包装与冷藏等方面介绍了甘薯品种玉丰的优质绿色制脯加工工艺,为甘薯食品加工提供了实践指导。

Abstract:In this article,the Yu Feng sweet potato of high quality green processing system of dried process were introduced from the raw potato acquisition,storage,processing and the choice of venue and timing,processing and detailed technical,sensory and physical and chemical indicators of the finished product,packaging and cold storage,etc.Some practical guidance were provided for the sweet potato food processing.
