摘    要:近年来,我国的食品安全屡屡出现问题,严重破坏了市场的正常运转和竞争秩序,而且还影响到了百姓对牛肉食品消费的信心,牛口蹄疫、疯牛病、瘦肉精中毒等事件的爆发,使牛肉质量安全成为全世界消费者普遍关注的问题之一。牛肉作为广大消费者的主流畜产品,如何保障其安全和质量,是摆在各级政府、肉牛企业和科研机构面前的重要课题。所以,建立我国牛肉全程质量安全追溯体系,不仅可以满足消费者对安全优质牛肉追溯性的需求,同时也将大大提高我国畜牧业生产的现代化水平和畜产品的国际竞争力。

Research Status and Existing Problems in China Beef Quality Tracing System

Abstract:In recent years, China's food security problems not only damaged the normal function of the market and competition order seriously, but also affected the confidence of the people on the consumption of beef products. The outbreak of bovine foot and mouth disease, mad cow disease and clenbuterol poisoning make beef quality and safety concerned by consumers around the world. Beef is the mainstream animal product having the vast number of consumers. How to protect its safety and quality is an important subject for all levels of government, beef cattle enterprises and research institutes. Therefore, the establishment of beef quality tracing system,not only meet consumer's demand for safe and high quality beef, but also will greatly improve the international competition level and modernization of China's livestock production.
