摘    要:研究不同贮藏温度对双孢蘑菇采后品质的影响。结果表明,低温贮藏环境可以抑制双孢蘑菇的水分丢失、感官品质下降、可溶性固形物含量降低和褐变等现象的发生。当相对湿度为95%时,双孢蘑菇较适宜的贮藏温度为0~5℃。

Effects of Different Storage Temperature on the Quality of Agaricus Bisporus

Abstract:Effects of different storage temperature on postharvest physiology and qualities of Agaricus bisporus were studied. The results showed that lower temperature could reduce the decrease of weight loss rate, sensory quality, soluble solids content and browning degree. When the relative humidity was 95%, the more suitable storage temperature of Agaricus bisporus was 0-5℃.
