小米的营养保健功能及产品开发

摘    要:以小米为材料,较全面地对其营养成分及其营养保健功能和小米的产品开发进行了研究。在营养成分及其营养保健功能方面,论述了碳水化合物、蛋白质和脂肪等;在产品开发方面,论述了小米油、小米饮料、小米焙烤产品和冲调食品。进一步分析该领域的研究热点和研究进展,为今后我国小米的研究方向和内容提供参考。

Abstract:Millet was used as material,and its nutrient composition,nutrition and health function and millet product development were studied.In the aspects of nutrient composition and nutrition and health function,carbohydrate,protein,fat and so on were discussed.In the product development aspect,millet oil,millet beverage,millet baking product and dispensing food were discussed.Further analysis of research hotspots and research progress was done for the future of millet research direction and content of reference.
