摘    要:试验以大宗茶采摘机采摘的特等茶青为研究对象,采用多次杀青工艺相结合的方法,通过对杀青叶性状变化的结果分析,调整杀青技术参数,以探索适合机采特等茶青的杀青新技术。结果表明:该茶青通过连续2次杀青处理,就可达到杀青目的,且杀青叶随存放时间的延长其性状保持稳定。相对于传统茶青,机采特等茶青的杀青温度要求较高,1次杀青筒壁温度为327~330℃,2次杀青筒壁温度为216~220℃。

Abstract:The experiment is designated to research the fixation of mass tea picked by machines. changes in the characters of fixated tea leaves in order to adjust the parameters of fixation technology Analyze and explore suitable fixation technilogy for special-grade tea leaves. The result indicated that the consecutive twotime fixation might satisfy the purpose of fixation, and the characters of fixated leaves might be stable during the storage. Compared with the traditional fixation method, the fixation temperature of specialgrade tea leaves picked by machine is higher. The bowl wall temperature is 327 - 330℃ in the first fixation, and that is 216 -220% in the second time.
