| 摘 要： | 以大蒜提取液和黄瓜为试材,研究大蒜中是否存在可以提高黄瓜抗冻性的因子。结果表明:随着温度的降低,大蒜中丙二醛含量逐渐升高;大蒜液处理的黄瓜脯氨酸可溶性糖含量都高于对照,丙二醛含量呈先下降后上升的趋势,处理组丙二醛含量始终低于对照;大蒜液处理的黄瓜耐低温时间比对照长。
