不同山楂品种的营养品质分析

摘    要:为了评价不同品种山楂果实的营养品质,筛选出营养丰富、满足不同需求的品种,为山楂品质育种提供参考,测定了11个山楂品种的营养成分,对其营养品质进行了综合分析。结果表明,不同山楂品种的总酸度、可溶性蛋白、可溶性糖和维生素C含量差异明显,其变幅依次为1.625%~3.061%,5.165~8.714mg/g,6.610%~28.110%,55.87~139.70mg/g。综合营养品质最好的品种是燕瓤红,营养品质最差的是敞口。

Abstract:To screen hawthorn cultivars which meet requirements for different nourishment and provide references for hawthorn breeding, the nutrition quality of 11 hawthorn cultivars were evaluated by measuring the nutritious parameters including total acidity, soluble protein, soluble sugar, and vitamin C. The fruits of different hawthorn cultivars contained significantly different nutrient contents, ranging from 1.625%~3.061% in total acidity, 5.165~8.714mg/g in soluble protein, 6.610~28.110% in soluble sugar, 55.87~139.70 mg/g in vitamin C. Among the cultivars evaluated here, Yanranghong exhibited excellent nutrient quality with highest evaluation index of 13 and Changkou reverse with poor score of 7. The significant difference among these hawthorn cultivars indicated that there is great potential to improve the nutritious quality of howthorn by breeding.
