摘    要:目的]研究软包装莲藕片的护色工艺,为莲藕片软包装产品开发提供参考依据。方法]以莲藕为研究对象,采用正交试验法对其护色工艺进行优化。选择不同浓度的柠檬酸亚锡二钠、焦亚硫酸钠、植酸、乙二胺四乙酸二钠(EDTA二钠)为护色剂进行单因素试验,考察每种护色剂对贮藏期内莲藕片褐变度的影响。在单因素试验的基础上,以褐变度为评价指标,采用正交试验法优化莲藕片的护色液配方。结果]软包装莲藕片在贮藏过程中均出现不同程度的褐变,4种护色剂均能有效抑制莲藕片的褐变。通过正交试验法优化了软包装莲藕片的复合护色剂配方,具体配方为柠檬酸亚锡二钠300 mg/L,EDTA二钠150 mg/L,植酸200 mg/L,焦亚硫酸钠100 mg/L。结论]该研究可为抑制莲藕贮藏和加工过程中褐变提供参考。

Optimization of Color Preservation Technology of Lotus Root Chips by Orthogonal Experiments
Abstract:Objective] To study the color protection technology of lotus roots slices flexible package,to provide reference for the development of lotus root flexible package products.Method] Using lotus root as the research object,the color protection technology was optimized by orthogonal test.Disodium stannous citrate,sodium pyrosulfite,phytic acid,ethylene diamine tetraacetic acid (EDTA disodium) of different concentrations were chosen as the single factor test of color protecting agent,the effect of the degree of browning of lotus root with each kind of color agent effect on the storage period were inspected.On the basis of single factor test,the browning degree was taken as the evaluation index,using the color protecting liquid formula with lotus root optimization by orthogonal test.Result] The results showed that:the flexible packaged lotus roots slices were all appeared different degrees of brown stain during the storage process,the 4 kinds of color-fixative could all suppress the brown stain of lotus roots slices actively.It optimized the compound color fixative formula of flexible packaged lotus roots slices through orthogonal experiment method,the specific formula is:disodium stannous citrate,300 mg/L,EDTA disodium 150 mg/L,phytic acid 200 mg/L,sodium pyrosulfite 100 mg/L.Conclusion] This study can provide some references for the browning of lotus root in storage and processing.
