摘    要:鳕鱼皮富含胶原蛋白及胶原蛋白肽,经蛋白酶酶解获得的胶原蛋白肽,具有分子量小、易乳化、适热能力增加及易被肠道吸收等优势。主要阐述鳕鱼皮胶原蛋白肽的性质、功效等,以期为鳕鱼皮胶原蛋白肽的综合利用提供参考。

Abstract:Cod skin is rich in collagen and collagen peptides.The collagen peptides obtained by protease hydrolysis have the advantages of small molecular weight,easy emulsification,increased thermal adaptability and easy absorption by intestinal tract.In this paper,the properties and efficacy of cod skin collagen peptide were mainly discussed,in order to provide reference for the comprehensive utilization of cod skin collagen peptide.
