摘    要:研究了越桔红色素的提取工艺、色素性质及其稳定性。越桔果皮宝石红色素应选择70%乙醇作溶剂,该色素色价高,吸光度值超过20,最大吸收波峰在520nm,属花青素类色素,产品质量稳定,适用于酸性食品添加剂。

Abstract:The characteristic. stability and the abstracting technology of gem red pigment in peel of Vaccinium vitisidaea were studied. 70% ethanol was selected to abstract gem red pigment. The chromatic value of gem red pigment is very high. The degree of absorbing light exceeds 20. The highest peak of absorbing light is at 520 nm. It belongs to the special kind of pigment like anthocyanidin. The quality of gem red pigment is very stable and suitable to be used as additive for acid food.
