| 摘 要： | 随着分子生物学和生物化学的发展,生物技术被用于食品,不仅提高了生产的效率,而且对于转基因食品和功能食品的开发提供了可能。在加工过程中应用生物技术,不仅可以改进加工工艺,也能改善食品的营养成分,具有非常广阔的前景。
