A Review of Control Studies on Superficial Scald

The control of superficial scald mainly consists of chemical control and non-chemical control. Superficial scald can be effectively controlled by the antioxidants diphenylamine (DPA) and ethoxyquin. But because of doubts about safety of these chemicals as food additivies there is a concern about their future acceptance as postharvest treatments. This has increased the interest in alternative methods of scald control. In the recent years the research has focused on non-chemical control by controlled atmosphere storage, postharvest heat treatment and superficial scald prediction.
