甘南藏羊与滩羊等品种羊肉氨基酸含量对比试验(初报)

摘    要:甘南藏羊肉中氨基酸总量为84.4g/100g,低于蒙古羊、波蒙F1和陶蒙F1羊,高于滩羊和小尾寒羊;必需氨基酸含量占氨基酸总量的38%,低于滩羊、小尾寒羊、当地蒙古羊、波蒙F1和陶蒙F1羊,但种类齐全。

Abstract:Teh total content of amino acid in mutton of Gannan Tibetan sheep was 84.4g per 100g, which was lower than that in the Mongolian sheep , Borderdale × Mongolian F1, Poll Dorset × Mongolian F1 and was more than that in the Tan-sheep and the Hart sheep with small-tail. The content of essential amino acid make up 38% of total content of amino acid in mutton of Gannan Tibetan sheep was lower than that Tan-sheep, Han sheep with small-tail, local Mongolian sheep, Bordedale × Mongolian F1 and Poll Dorset × Mongolian F1, but the kinds of essential amino acid were complate.
