竹笋甾醇和膳食纤维的制取方法研究进展

摘    要:植物甾醇和膳食纤维是自然界广泛存在的具有诸多生理功能的重要化合物,本文对近10年来竹笋甾醇和膳食纤维的制取方法研究进展进行了综述,对发酵法制取竹笋甾醇和膳食纤维的差异进行了比较,对竹笋及其下脚料的深加工研究和开发利用前景进行了展望.

Abstract:Phytosterol and dietary fiber are two important compounds with various biological functions widely existing in the nature.In this paper,the methods to extract sterol and dietary fiber from bamboo shoots in the latest decades were reviewed.The difference in the preparing of sterol and dietary fiber from bamboo shoots using fermentation extraction method was compared.The fine-processing and exploitation prospect of bamboo shoots and their leftovers were discussed.
