摘    要:本研究依据气象条件对花椒品质形成的影响,以重庆江津不同采收时期收获的青花椒为研究对象,分析青花椒主要品质随成熟期的变化情况,确定青花椒适宜采收期并为进一步开展青花椒气候品质认证提供支撑。结果表明,不同采收期青花椒挥发油含量和组分均有变化,挥发油的主要芳香物质为芳樟醇、二环3.1.0]己烷-3-酮、右旋萜二烯等。由于气象因素影响,采收后期挥发油、麻味素、含水量等指标趋于稳定,青花椒适宜采收期为6月上旬。

Zanthoxylum schinifolium Sieb.et Zucc in Jiangjin: Climate Quality Change with Harvesting Time
Abstract:According to the effect of meteorological condition on the quality formation of Zanthoxylum schinifolium Sieb.et Zucc, taking Zanthoxylum schinifolium Sieb.et Zucc in Jiangjin, Chongqing of different harvesting time as the experimental material, we analyzed the main quality changes of Zanthoxylum schinifolium Sieb.et Zucc with its maturity, and determined the suitable harvest time, aiming to provide a basisfor further developing the climate quality certification. The results showed that: there were some changes in contents and components of essential oil of different harvesting time; the main aroma components included linalool, bicyclo 3.1.0] hexane -3-ketone, (+)-limonene; the contents of essential oil, numb-taste components and water became stable in the late stage of harvesting time due to the effect of meteorological factors, the early stage of June is the suitable harvesting time of the year.
