| 摘 要： | 采用分光光度法对四种鲜蛋的全蛋、蛋清、蛋黄的蛋液分别进行分析测定，较详细地说明了各种鲜蛋及其在不同部位糖分的准确含量。本试验还对蒽酮法测定的较佳操作条件进行了探讨，可作为蛋和蛋制品以及高蛋白食品糖分测定的参考。
