核桃花蛋白质提取条件的初步研究

摘    要:研究在7种PH值,4种温度及3种阳离子溶液条件下,核桃花蛋白质的抽提率。结果表明,核花蛋白质在碱性溶液中抽提率较大,在酸性溶液中提率较大,在酸性溶液中最小;温度对其影响对其影响不大;在Na^+,K^+溶液中的抽提率明显大于Ca^2+溶液。

Abstract:Protein was extracted from flowers of Persian walnut ( Juglans regia L.) at 7 levels of pH, 4 temperatures and in solutions with 3 different ions. Relatively, the extraction rate was high in alkaline solutions and low in acid solutions. Temperature had no significant effect on extraction rate. Protein extraction rate was significantly higher in solutions with Na or K than in solutions with Ca 2 .
