云南德宏水牛乳中酶活性的研究*

摘    要: 对云南德宏水牛乳和荷斯坦牛乳中淀粉酶、N-乙酰-β-D-氨基葡萄糖苷酶、γ-谷氨酰胺转移酶、碱性磷酸酶以及乳过氧化物酶的活性进行测定。结果表明,云南德宏水牛乳中淀粉酶活性极显著高于荷斯坦奶牛乳(P<0.01),γ-谷氨酰胺转移酶、N-乙酰-β-D-葡萄糖苷酶活性显著高于荷斯坦牛乳(P<0.05),荷斯坦牛乳中碱性磷酸酶活性显著高于水牛乳(P<0.05);德宏水牛乳与荷斯坦牛乳中乳过氧化物酶活性无显著性差异(P>0.05)。

Abstract:Activities of amylase (AMS), N-acetyl-β-D- glucosaminidase (NAGase), γ-glutamyltransferase (γ-GT), alkalinehosphatase (ALP) and peroxidase(LP) of Dehong buffalo milk and Holstein milk were analyzed. The result showed the activity of AMS in buffalo milk was significantly higher than that in Holstein milk (P<0.01); NAGase and γ-GT activities were higher than those in Holstein milk (P<0.05).However, ALP activity of Holstein milk was higher than that in buffalo milk (P<0.05); No significant difference of peroxidase activity between Holstein milk and Dehong buffalo milk was observed (P>0.05).
