对不同养殖模式大黄鱼营养成分的比较

对同一海区不同养殖模式(大围网、传统网箱)的成年大黄鱼及野生成年大黄鱼,进行背部肌肉营养成分(常规营养成分、氨基酸、脂肪酸)的测定及肌肉感官性状的主观评定。结果表明:①大围网养殖大黄鱼肌肉的粗蛋白、氨基酸总量、呈味氨基酸总量、鲜味氨基酸总量及多不饱和脂肪酸(PUFA)总量均显著高于传统网箱养殖大黄鱼(P<0.05);肌肉的粗脂肪、饱和脂肪酸(SFA)总量及单不饱和脂肪酸(MUFA)总量均显著低于传统网箱养殖大黄鱼(P<0.05);肌肉的pH值、水分和粗灰分差异不显著(P>0.05)。②大围网养殖大黄鱼肌肉的感官性状显著好于传统网箱养殖大黄鱼(P<0.05)。③大围网养殖大黄鱼上述营养成分接近野生大黄鱼(P>0.05)。大围网养殖可改善大黄鱼的生活环境,补充天然饵料,是一种提高大黄鱼肉质的可行途径。

Comparison of the Nutrient Components of Pseudosciaena crocea in Different Culture Conditions

In the paper,the nutrient components(normal composition of nutrition,amino acids,fatty acids) and sensory attributes in the back muscle of adult Pseudosciaena crocea and wild adult Pseudosciaena crocea in different culture conditions(seine net,traditional net cage) were measured and evaluated subjectively in the same sea area.The results showed that: the coarse protein,total amino acid,delicious amino acid,fresh taste amino acid and polyunsaturated fatty acid(PUFA) contents in the muscle of Pseudosciaena crocea in seine net were much higher than those of traditional net cage(P<0.05);the crude fat,saturated fatty acid(SFA) and monounsaturated fatty acid(MUFA) contents in the muscle of Pseudosciaena crocea were significantly lower than that in traditional net cage(P<0.05);the PH value,water and crude ash of muscle had not significant difference(P>0.05).The sensory attributes in the muscle of Pseudosciaena crocea in seine net were significantly better than that of traditional net cage(P<0.05).The above nutrient components of Pseudosciaena crocea in seine net were close to wild Pseudosciaena crocea(P>0.05).Cultured Pseudosciaena crocea in seine net could improve its living environment,and could supply natural bait for them,it was a feasible way for improving meat quality of Pseudosciaena crocea.
