摘    要:葛根是国家卫生部批准的药食两用植物,营养丰富,药用价值高。本文主要对葛根的营养保健功能、国内外加工现状及在饮料中的应用进行综述,以期为葛根饮料的开发提供参考。

Abstract:Radix puerarias is a medicinal and edible plant certified by the Ministry of Health. It has rich nutrition and high medicinal value. This paper reviews the nutrition and health function of Radix puerariae, and the processing status in both domestic and overseas as well as its application in beverage development, in order to provide directions for the innovation of healthy beverage.
