摘    要:利用双缩脲试剂和分析方法测定大豆乳清废水中乳清蛋白含量,结果表明:①采用酪蛋白为标准物质绘制标准曲线时,分析结果中的蛋白质为碱性可溶性蛋白质,采用代表性很强的样品(已知其蛋白质含量)为标准物质绘制标准曲线时,分析结果中的蛋白质为总蛋白质。②大豆乳清粉中总蛋白质含量为57.58%,大豆乳清废水原液的总蛋白质含量为0.47%;大豆乳清粉中碱性可溶蛋白质为50.44%,大豆乳清废水原液碱性可溶性蛋白为0.38%。

Abstract:A new Biuret reagent and test procedure was introduced,and proper use of the method to assay protein in soybean whey protein was investigated.The results showed that as alkaline soluble protein was examined while casein being the standard,total protein was analyzed if a typical sample was used as the standard.The total protein content of soybean whey powder was 57.58%,the total protein content of soybean whey waste water was 0.47%;the alkaline soluble protein content of soybean whey powder was 50.44%;the alkaline soluble protein content of soybean whey waste water was 0.38%.
