花生衣红色素微波提取工艺研究

摘    要:
研究了利用微波辅助提取花生衣红色素 ,并得到最佳工艺条件 :提取功率为 2 40W ,提取溶剂为 60 %的乙醇 ,提取时间为 90s,料液比 (g/ml)为 1∶2 0 ,提取级数为二级 ,色素提取率为 95 .2 6%。花生衣红的最大吸收波长为 2 15和 2 80nm ;对光、热、pH稳定 ;NaCl、Ca2 + 、Mg2 + 、Cu2 + 、Zn2 + 对色素影响不大 ,Fe3+ 对色素影响很大 ;H2 O2 对色素有轻微的减色作用 ,Na2 SO3对色素的作用不明显。蔗糖能使色素增色。

Abstract:
Microwave extraction of red pigment from red peanut skin was studied. The results showed that the optimum condition was that extraction power was 240 W, solvent was 60% alcohol, extraction time was 90s, the weight of mixture was 20 times as large as the peanut skin, the number of extraction stage was 2 so that the extracted total yield can be up to 95.26%. It showed the maximum absorption beam of peanut-skin red was 215 nm and 280 nm and it could be stabilized between pH1~12; It had good light and heat stability. The pigment would not be harmfully affected by NaCl, Ca~ 2+,Mg~ 2+,Cu~ 2+ and Zn~ 2+,but was changed by Fe~ 3+.Na_2SO_3 had no effect on pigment color, but H_2O_2 led to colorless. Its color could be increased by adding sucrose.
