摘 要: | The gliadins, which termed 琢,茁,酌and 棕gliadins, are very important to the viscoelastic properties that confer the unique processing properties to weight doughs. In wheat, genes encoding gliadins are highly conserved in terms of chromosomal location and function. The nucleotide sequence of 棕-gliadin gene was cloned by PCR ap-proach from local common wheat cultivar named Jinan 177 (TriticumastivumL.) and has been registered in the GenBank.
