| 摘 要： | 黄曲霉毒素是毒性最大的真菌毒素。产生黄曲霉毒素B1（AFB1）的霉菌主要有两种．即黄曲霉菌（Aspergillus flavus）、寄生曲霉菌（Aspergillus parasiticus），另外还有Aspergillus nomius中的个别菌株。黄曲霉毒素M1（AFM1）是AFB1的4-羟基衍生物，分子式C17H12O7，分子量328。乳与乳制品中的黄曲霉毒素AFM1与乳畜的饲料有关．
